Mexican cuisine has amazing staying power and En Fuego offers a lighter approach to the classic fare. En Fuego, meaning "on fire," ties together the grill-based cuisine and the open fire pit themes, blending food with a historic homage to early Central American culture.

Cody Stell, Owner & Executive Head Chef

After attending the University of Oklahoma, Cody Stell has amassed over 20 years in the food service industry. Stell has spent time working, Oklahoma City, Houston, Denver, Aspen and Tulsa.  Stell has also accumulated over 10 years of catering experience, providing menus for intimate events servicing 10 people to extravagant parties with over 500 guests. 

Along with founder Greg Hughes, Stell helped shape the in the raw concept which originated in Tulsa, OK, and has helped expand operations to Oklahoma City, Norman and Broken Arrow. He has developed a plethora of unique customer relationships over the past 15 years as the head sushi chef. 

Stell now seeks to focus on a healthier cuisine and lifestyle, using all natural and organic ingredients whenever they are available. His desire is for customers of all ages to feel good about experiencing the En Fuego menu and providing the Tulsa community with healthy food choices. Another goal is to purchase locally grown ingredients and keep dollars invested in the surrounding area. 

Stell's interests outside of work include spending time with friends and family, any outdoor activities, running, his dogs, football and almost anything sports-related, and music, specifically playing the drums.

Greg Hughes, Partner & Operations Consultant

Greg Hughes holds a Bachelor of Arts and Science degree with emphasis on Communications from the University of Southern California.  Since 1988, his career has taken him from his initial experience in sales with Pepsi and entrepreneureship to his phenomenal hit, in the raw. All of his professional experience has been designed to help him learn how to make his vision a reality. 

Hughes is not only a partner, he serves as a consultant and has installed the same systems that have made in the raw a success. Hughes helps with all aspects of the business and will continue to be invaluable by promoting En Fuego under the in the raw umbrella.
